Swap your Masala White Rice Khichadi for our delicious "Kodo Khichadi"

We used to think Kodo Khichadi might be bland, but it’s actually packed with flavor! When paired with the right spices and ingredients, it’s just as tasty and satisfying as traditional Masala White Rice Khichadi. Unlike white rice, which is high in carbs and low in nutrients, kodo millet is a nutrient-rich whole grain loaded with fiber, protein, iron, and magnesium. With its lower glycemic index and superior nutritional profile, kodo millet is a healthier choice that supports better digestion and sustained energy.

Let's dive into the recipe,

Ingredients:

  • 1/2 cup split green moong dal or yellow moong dal
  • 1/2 cup LivUp kodo millet (Kodri)
  • 4 tbsp oil
  • 2 tbsp peanuts
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp hing (asafoetida)
  • 8-10 curry leaves
  • 1 large onion, finely chopped
  • 4-5 garlic cloves + 1/2 tsp ginger paste
  • 1 large tomato, finely chopped
  • 1 medium carrot, finely chopped
  • 1/2 cup green peas
  • 1 medium potato, chopped
  • 1.5 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp coriander cumin powder
  • 1 tsp garam masala
  • Salt to taste
  • 4 cups water

For Garnishing:

  • Finely chopped green coriander leaves
  • 1 tsp ghee

Instructions:

  1. Clean the dal and kodo millet by rinsing them 3-4 times with water. (Optional) Soak them together in enough water for 3 hours. Soaking improves digestion and nutrient absorption by activating enzymes that break down complex starches.

  2. Heat oil in a pressure cooker and fry the peanuts until golden. Add mustard seeds and cumin seeds, and cook until they start to pop.

  3. Add hing, curry leaves, and ginger-garlic paste. Once the mustard seeds and cumin seeds are cooked, add the finely chopped onion. Sauté until the onion turns pink.

  4. Mix in the spices and cook until they release their aroma and oil. Add the chopped tomatoes, carrots, green peas, and potatoes. Stir well.

  5. Drain the soaked dal and kodo millet, then add them to the cooker. Mix thoroughly, add 2 cups water, and stir. Close the lid of the pressure cooker and cook the khichadi on a high flame for 3 whistles.

For Garnishing: Top with finely chopped green coriander leaves and a drizzle of ghee before serving. Enjoy your hearty, flavourful khichadi!
