Why Little Millet?
Little millet, also known as "Samai" or "Sama," is a tiny grain packed with nutrients. It's gluten-free, high in fiber, and rich in essential minerals like iron and calcium. Its mild, nutty flavor and fluffy texture make it a fantastic alternative to rice in kheer
Ingredients:
- 1/2 cup LivUp little millet
- 2 cups milk (or a dairy-free alternative)
- 1/4 cup jaggery powder (to taste)
- 1/4 cup chopped nuts (like almonds and cashews)
- 1/4 cup raisins
- 1/2 tsp cardamom powder
- Few strands of saffron (optional)
- 1 tbsp ghee
Instructions:
- Prepare the Millet: Rinse the little millet thoroughly. Roast it in ghee until fragrant. Take care millet doesn't change colour
- Cook the Kheer: Include a cup of water to the millet and let it cook till soft. You can simmer and close the lid for few minutes. When the millet turns soft and mushy, add milk. With constant stirring let the millets get cooked in milk. Milk reduces and becomes creamy and thick after few minutes
- Add Flavour: Stir in sugar, cardamom powder, and saffron. Mix well.
- Incorporate Nuts and Raisins: Fry nuts and raisins in ghee, then add to the kheer.
- Serve: Garnish with additional nuts and enjoy warm or chilled.
